When I moved to Napa, CA eighteen years ago to study winemaking, I couldn't help but compare Napa Valley to Israel. As a wine enthusiast, I would often bring Israeli wines to tastings.

My dream was to share the story of an ancient world, a winemaking tradition dating back 11,000 years.

The modern Israeli wine industry is cutting-edge, but it was disconnected from its roots.

It has long produced varietals like Merlot and Cabernet, grapes cultivated in Europe and brought to Israel by the Baron deRothschild and others. As I honed my craft making those delicious wines,

I found myself wondering about the types of grapes that were grown in ancient Israel.

What kinds of wines had they made? Would we still enjoy them today?

After years of planting vineyards and building wine brands both in Israel and abroad, I decided to explore these questions further. With the help of my family vineyards in Givat Nili, I embarked on a personal project to make my own private wine,

a limited-edition labor of love.

Made in a natural and ancient style, I have brought the Dabouki back to its roots.

My father-in-law, Sami Aroyo, who hailed from Turkey and built a home and farm in Givat Nili, planted a Dabouki vineyard with his father in 1972. That vintage vineyard yields this sweet ancient grape whose name means "sticky sweet" in Arabic.

Using the skills I’ve honed over my years in the industry, I’ve crafted four unique wines from our abundant 2022 harvest.

Each wine showcases the grape's unique potential.
